Smoked Mackerel, Beetroot and Horseradish Jackets.

If you’ve not tried this foodie threesome of marital bliss before, then I urge you to give it a whirl.

Its the quickest and simplest dish to knock together, too. So it makes an ideal late night supper.

To make enough filling for 2 jacket potatoes, you will need:

3 x Smoked Mackerel fillets.

4 large beets. Ideally freshly cooked.

1 jar of Horseradish.

Simply mix the three ingredients together in a bowl, adding the Horseradish to taste (Personally, I like to go heavy on the Horseradish … even though it does go right up your nose!)

You can add whichever fresh herbs you like, but may I suggest a sprinkling of Chives. And perhaps some peppery Watercress on the side too…

Serve on a hot, buttered and sea-salted Jacket potato. and season to taste.
